Inspired by the classic Italian yeasted flatbreads, our focaccia have a bit of a local twist. We have replaced the olive oil with locally sourced oak smoked rapeseed oil from Yare Valley Farm, and the dough also contains mashed (locally sourced!) potato along with a blend of English & Italian wheat flours. This is made with a very small quantity of yeast, and a long two stage fermentation process yields a bread with complex favours and a very open crumb structure with large irregular holes. This 'plain' version is topped simply with sea salt and fresh home-grown rosemary. 

Ingredients: white wheat flour, potato, water, oak smoked rapeseed oil, yeast,  salt, rosemary. Allergens in bold.
