This local honey is a blend of Spring honey, which is predominantly from oilseed rape flowers and summer honey, which is from wildflowers, peas, beans and trees. It is "seeded" with the oilseed rape honey to get a soft set honey which is spreadable, containing small round crystals for a real melt-in-the-mouth texture.
